Frozen Strawberry Salad

 

This recipe was given to me by our Dominican Associate, Dorothy Cour, Sister Kathleen Cour’s mother. I used it often when I cooked for retreat groups. It makes a nice treat.

 

¾ cup sugar

1 8-ounce cream cheese

2 sliced bananas

1 20-ounce can crushed pineapple-drained

1 20-ounce package frozen whole unsweetened strawberries (thaw slightly)

1 large Cool Whip

 

Mix sugar and cream cheese until smooth. Add bananas, pineapple and strawberries. Fold in the Cool Whip. Spread in dish and freeze overnight. Thaw about 1½ to 2 hours before serving. Makes approx. 12-15 servings.
