Hawaiian Pineapple Banana Bread

 

My sister, Colette Cheffer, gave me this two years ago. It is a favorite with the sisters at the motherhouse.

 

3 cups flour

2 cups sugar

1 teaspoon baking soda

1 teaspoon cinnamon

¾ teaspoon salt

1 cup chopped walnuts

1 cup oil

3 eggs beaten

2 cups mashed bananas

2 teaspoon vanilla

1 8-ounce can crushed pineapple

 

Preheat oven to 350°. Combine flour, sugar, baking soda, cinnamon and salt in large bowl. Stir in nuts. Combine remaining ingredients. Stir just until dry ingredients are moistened. Spoon batter into 2 greased and floured loaf pans. Bake 1½ hours or until wooden toothpick in center comes out clean. Cool in pans for 10 minutes. Remove and cool on rack.
