Orange and blueberries are a perfect combination. This is a nice treat for Sunday brunch!
1 cup quick cooking oats
1 cup orange juice
3 cups all-purpose flour
1 cup sugar
2¨ö teaspoon baking powder
1 teaspoon salt
¨ö teaspoon baking soda
1 cup vegetable oil
3 eggs, beaten
1¨ö cups fresh or frozen blueberries
1¨ö teaspoon grated orange peel
Topping
¨÷ cup sugar
1 teaspoon cinnamon
Combine the oats and orange juice and set aside. In another bowl combine flour, sugar, baking powder, salt, and baking soda. Combine the oil into the egg and oat mixture, then stir into dry ingredients just until moistened. Fold in blueberries and orange peel. Fill paper-lined muffin cups ¨ø full. Combine topping and sprinkle over batter. Bake 400¡Æ for 15-20 minutes. Yields 1¨ö dozen
