Here’s a community favorite from the recipe files of our Sister M. Hubert. It’s easy to make, and has a delicious aroma. Your children will want one or two as soon as they come out of the oven!
1 cup vegetable oil
1 cup butter or margarine
1 cup granulated sugar
1 cup powdered sugar
1 teaspoon Vanilla extract
1 teaspoon almond extract (optional)
2 eggs
1 teaspoon baking soda
4 cups flour
1 teaspoon cream of tartar
1 teaspoon salt
Cream oil, butter, and both sugars. Add vanilla and eggs. Sift dry ingredients; stir in and blend. Roll into small balls and dip in granulated sugar. Press down on a lightly greased cookie sheet using the bottom of a drinking glass dipped in granulated sugar. Bake about 12 minutes at 350°. Makes about 8 dozen cookies. (Hint: The dough can be put in the refrigerator after it is mixed and baked the next day.)
