Zucchini Rounds
When zucchini is plentiful try these! Be sure you squeeze the water out of the shredded zucchini.
1 cup biscuit mix
¼ cup grated parmesan cheese
½ Teaspoon salt
¼ Teaspoon pepper
2 eggs-slightly beaten
2 cups shredded zucchini, unpeeled, squeeze dry
2 Tablespoons margarine
Combine biscuit mix, parmesan cheese, salt and pepper. Stir in eggs, just until moistened. Fold in zucchini. Fry by spoonful for 2-3 minutes until brown – like pancakes. Makes 12 small or 6 large. |
